Cooking with Campbell's Soup Challenge : Goat's Cheese & Chorizo Pasta Bake

As I told you yesterday, in order to celebrate the launch of their funky limited edition pop art-inspired tins, Campbell's are asking people to get inventive and use their condensed soup in recipes.

Here's what I concocted last night - and very nice it was too !

Goat's Cheese & Chorizo Pasta Bake

ingredients :

serves 6

200g small pasta
1 can of Campbell's condensed tomato soup
2 cans of water (or 1 can of water and 1 can of crème fraîche)
200g bacon chopped into lardons
100g chorizo
1 small can sweetcorn
1/4 red pepper
1 leek
1 onion
4 mushrooms
2 carrots
100g grated cheddar
6 slices of goat's cheese

Preheat the oven to 180°C.

Empty the pasta shapes (I used coquillettes) into an oven-proof dish. Empty the can of condensed tomato soup on top. Refill the can with water and add two cans of water or one can of water and one can of crème fraîche. Mix it up (and don't panic when it looks unappetising at this stage !).

Put the bacon in a frying pan and gently fry for a couple of minutes while you finely chop the vegetables (onions, mushrooms, leeks, onions, red pepper). Add the vegetables and fry, stirring so it doesn't stick, for 5-7 minutes, until tooth tender.

Finely chop the chorizo and add this, and the can of sweetcorn (drained), to the pasta and soup. Add the cooked vegetables and bacon and stir it all up to thoroughly combine.

Bake in the oven for 20-25 minutes until all of the liquid is absorbed and the pasta is al dente.

Sprinkle over the grated cheddar and lay the goat's cheese slices on top. Pop back in the oven for ten minutes until the cheese is melted and golden brown.

This got such a warm reception that this is the only photo I managed to get before it all disappeared into hungry mouths !

Disclosure : This is my entry for Campbell's 15 Minutes of Fame recipe challenge. Campbell's sent me through four cans of the limited edition pop art cans in order to take part in the challenge.

Fancy a Soup-er Fifteen Minutes of Fame ?!

Fancy a Soup-er Fifteen Minutes of Fame ?!

I've just been having fun "Warholising" myself on the Campbell's Soup website - what do you think ?!

But before you head over and have a play, hang on a minute - there's more ! Campbell's have launched a new range of limited edition pop art-inspired soup cans - it's a bit like the chicken and the egg. Andy Warhol was inspired by the everyday images of (amongst other things) soup cans to create his pop art masterpieces and now those works of art have inspired the new soup cans !

To celebrate the funky new packaging, Campbell's are running a fab foodie competition, asking people to come up with a recipe using their soup. You can find all about it on their website at http://www.campbellsoup.co.uk/warhol/recipe.php

The winner will receive a lovely set of Le Creuset cookware and have their recipe featured on the Campbell's website.

I've just made (and eaten !) mine so I'll get the blogpost up tomorrow to show you what I made.

Join Little Mix in this year’s Sketch Santa competition

I was planning on holding back on the Christmas posts until at least after Halloween, but this one is a great competition for the kids and the closing date is next week !

**************************************************

If the thought of working with Little Mix gives you wings, or you’re simply crazy for arts and crafts, it’s time to get your pens and pencils ready!

A nationwide competition is launching today (7th October), giving youngsters a unique opportunity to create a Christmas card design for a brand new charity card pack starring chart-topping girl group, Little Mix….but entrants have got to be quick, the contest will close on 14th October 2013!

The ‘Sketch Santa’ competition, launched by ITV’s Daybreak and supported by Hallmark, offers children aged 6-16 a once-in-a-lifetime chance to have their drawings brought to life as a card this Christmas. The winning design will be modelled by Little Mix and featured in a limited edition six pack of cards alongside five festive designs starring the group. What’s more, the lucky winner will be announced on national TV too!

Sold as an official product for ITV’s ‘Text Santa’ appeal 2013, the special card packs will be available nationwide from www.hallmark.co.uk and selected Hallmark stores later this year. Each pack sold will see a portion of the proceeds donated to the ‘Text Santa’ appeal; which in turn supports six worthy charities based in the UK.

Little Mix’s Perrie Edwards, said: “We love the idea of getting creative for Christmas and what better reason to get involved in a bit of festive fun than to help the Text Santa appeal? We had such a good time creating our cards for this special pack and now we’re really looking forward to seeing what the Daybreak viewers come up with as their contribution!”

To enter the art contest, children are asked to create a Santa-based design inspired by what Christmas means to them. Entries must be original, creative and drawn on A4 paper in a portrait setting.

Tamsyn Johnston Hughes, Sketch Santa Judge and Campaign Manager for Hallmark (the card and gift specialist helping to create and print the winning design), said: “Whether you’re a devoted ‘Mixer’, a fundraiser or you simply love to get creative, the Sketch Santa competition really is a fantastic opportunity. Not only could you be changing the lives of those linked to the Text Santa charities but you could also enjoy some life-changing experiences yourself, such as starring on national TV and seeing your very own Christmas design hit the shelves.

“When it comes to penning that winning design, I’d concentrate on two things. Firstly, make sure you base your design on what Christmas means to you as that personal touch will show through in your artwork. Secondly, remember the critical role that Christmas cards play in our festive traditions, they’re kept in the hearts of our homes and are used to decorate mantelpieces, windowsills and walls. As such, your design will need to stand out in this setting.

“We wish everyone involved the best of luck and we can’t wait to see all the wonderful designs that come through. This is the third year we’ve been privileged to work with Daybreak on a creative campaign such as this and we’re sure it’s going to be our best one yet!”

The ‘Text Santa’ appeal aims to raise awareness and donations for UK charities that make a difference to people's lives. For 2013, the six chosen charities set to benefit from funds raised include: Age UK, Barnardo’s, Beat Bullying, British Heart Foundation, CLIC Sargent and Help the Hospices.

Full details of the competition, entry forms and guidelines will be held on www.itv.com/daybreak. Further information, and behind the scenes news, will also be shared on www.facebook.com/hallmarkuk .

Daybreak's Sketch Santa launches live on Daybreak on Monday 7th October. Closing date for entrants is 14th October 2013 with the winning card announced live on Daybreak on Friday 29th November. Daybreak, ITV, weekdays, 0600 - 0830
